Lye water is chemically sodium hydroxide and its purpose of usage is to make your cookies more crsipier and browny when it comes to the texture. Lye water is a common ingredient used in all the bakery industries and therefore it becomes really difficult for us to create similar kind of market cookies at our home, since we do not know the ingredient as lye water. One more reason is to break the gluten part of dough while preparing the cookies. This helps in losing the elasticity and makes it more manageable for the prefessionals to handle the dough. You are certainly use few other alkaline promoters in lieu of lye water. Some of them are baking soda and culinary lime. Culinary lime is chemically calcium hydroxide and works in the same fashion.
