I love crispy okra chips. Try this recipe and you will not know its the slender gooey vegetables at all. This makes an excellent accompaniment to lentil curries.
Lady's finger 1 1/2 cups
Corn flour or Rice flour 2tbsp
Besan (Chickpea flour) 2 tbsp
Salt to taste
Chilli powder 1/2tbsp
Oil to fry or coat
Mix the flours, salt and chilli powder.
Wash the lady's finger and chop the top and bottom out. Cut the lady's finger slantingly. Mix in the okras in the flour mixture.
Do not add water, the dampness in the vegetable is enough to bind.
Heat oil and deep fry till crisp.
Use the microwave method for a healthier version.
Wash and dry the okra. Discard the top and bottom of the okra. Slit lengthwise and half lengthwise.Transfer the okra pieces to a bowl. Add oil (if using) or sprinkle very little water so that the seasonings would stick to the okra. Then add all the other ingredients and mix it thoroughly with your hand.
Place okra in a microwave dish or directly on the microwave plate.Microwave for 5 minutes. Stir and cook for another 2 minutes. Increased the time by 30 seconds till you get the crispy texture, stirring every 30 seconds.Stand for1 minute.
How to make Fried Okra Chips?
Buy nice tender Okra's, Take a wet cloth and wide each one or wash and wipe them dry. also let them air dry for about 1 hour, then cut the tops off, slice them down the middle, deep fry them until crispy, drain and sprinkle with your favorite spice.
