The nutritious value of frozen vegetables could be greater than the fresh ones depending on the conditions in which they are froze. If vegetables are froze immediately after picking them at peak condition after harvesting, there are more chances that they have higher nutrition values compared to fresh vegetables, which lose nutrients in transportation and storage processes. If the veggies blanched before freezing, they tend to lose nutrients.
