Vegetable oils like canola, sunslower, safflower, and any other polyunsaturated oil should never be used for frying or deep frying because they are very unstable at high temperatures..

Vegetable oil for deep frying a turkey can be used. However it must not be reused. Actually vegetable oils are seldom used in deep frying meats as they have low flash point. Canola, sunflower, safflower, peanut, tropical oils, like palm oil, coconut oil and rice bran oil are popularly used oils for deep frying.
