No it is not advisable to do so, since olive oil brings with it a strong flavor, with would generally be unsuited for a blueberry muffin. You can, however, use another neutral oil, like canola oil, in the place of vegetable oil. If you really want to use oilve oil, try using the extra light variety, which is a lot more refined and neutral than virgin olive oil.
