Chanterelle mushrooms can be preserved by freezing. They are an edible variety of fungus that belong to the genus Cantharellus. To freeze them, it is a common practice followed by many people to cook them gently before freezing. They are placed in a pan after cut into quarters with a little oil or butter and stir fried lightly for a few minutes. Chanterelles possess enough moisture to release out once heated with a little oil. They can be frozen along with the released liquid. They can be frozen without being sauteed either. It is preferable to freeze only young and firm chanterelles.
