Canned pineapple has a very less quantity of bromelin as compared to fresh pineapple. When foods are canned commercial, there is commonly some heat used to sterilize the can and contents to make sure that there will not be any growing microbes in the food. This heat also destroys some of the enzymes (including some of the Bromelin), so it won't have as much of an impact for digestion.
