Originally,learned the recipe at Peter Krump's NY Cooking School in late 1980's. The spices are quickly warmed with a few tablespoons of butter in a skillet then the nuts are added - again not for very long. Finished off in the oven on a flat pan - again, for just a few minutes, as I recall. Need better handle on the right spice proportions. This was not an overly salty or overly hot nut mix. Thanks
