Oysters may be cooked with or without the shells. To cook oysters without the shells, they must be placed in a colander and may be rinsed by adding a little water to them. After the water is drained, they may be added in a pan with 200-227 gms of butter ( for 50 deshelled oysters), black pepper, salt and red pepper. They may be cooked over a clear fire by stirring. The indication that the oysters are cooked is when they start shrinking.
