Tangerine zest is almost as prized as the flesh in some countries. In Chinese cookery it is an important seasoning that is sold as dried tangerine peel. It is soaked and used, sparingly, to flavor meat, poultry, soup and sweet dishes. To obtain the zest, lightly grate the skin of a whole tangerine on a fine, sharp cheese grater.
