Flash frying is done on high temperature and the vegetables are pan-fried in a flash. This kind of frying is generally done in Chinese cooking, especially while making noodles, fried rice, any dry vegetable on meat dish. The food is not completely cooked in flash frying and that is what gives it the crunchy feel and taste. This may be healthy in terms of not overcooking food, but different foods have different nutrient retention capacity in cooked and uncooked form. Secondly, if the ingredient such as vegetables are not washed thoroughly before cooking, it can lead to some health problems.
