Fudge, pralines and fondants are made by cooking the ingredients upto the softball stage. At this temperature, sugar syrup dropped into cold water will form a soft, flexible ball. If you remove the ball from water, it will flatten like a pancake after a few moments in your hand. The sugar concentration in this stage is about 85%. The time that it takes for fudge to reach the softball stage is anywhere between 5 to 12 minutes.
