Dehydrating potatoes is the quickest and the easiest way to keep them stored for a long time for future uses. For dehydrating potatoes, conventional oven or solar oven works perfectly fine. To blanch potatoes for dehydrating, wash them and peel off their skin. Now, boil some water in the kettle and sprinkle in a few teaspoons of salt. Plunge some sliced potatoes into the boiling water and simmer for 6 to 8 minutes. Then cool them in iced water for 15 minutes and blot dry with paper towels.
