Swiss chard is a storehouse of Vitamins A, C & K and Iron. To preserve the color of Swiss chard and keep their nutrient quotient intact, blanch them prior to cooking. For blanching Swiss chard, boil them in pot of water. Add plenty of salt to the water while blanching the Swiss chard. It’s good to add the chards in small batches. Boil the Swiss chards for full two minutes and you will see their colors are brightening up. Then remove them and shock them plunging them in a bowl of iced water.
