Fresh sweet potatoes are reddish or pinkish in color with solid body which is spindle shaped. They have very smooth texture with very thin skin. The rotten sweet potatoes are sometimes the cause of food poisoning and diarrhea. The rotten ones secrete ketone toxin which also creates favorable environment for various acid producing bacteria. The rotten ones acquire black or brown spot on their otherwise smooth and ruddy skin.
