There is only one way to make beef chunks tender in a frying pan: Keep the pan hot, as hot as 350 degrees. The steak should be added only after the pan is searing hot. Keep the beef chunks on each side for about a minute, till they get charred and then turn over the other side. This ensures that the juices of the beef remain inside and do not evaporate. Bring the flame down to medium and let the beef chunks cook. After 4-5 minutes, you will be left with beef chunks which are crusty on the outside, but tender on the inside.
