To make dried ginger at home, wash, dry and peel fresh ginger. Slice thinly. You can dry this in the sun, or use an oven at its lowest temperature settings and keep the ginger overnight in the oven, with the door slightly open to maintain an optimum temperature of 130 to 140 F. Turn the ginger periodically, and oven dry for 10 to i5 hours, until completely dried. Store in an airtight container of a zip pouch.
