Cocoa powder is extracted from the same bean, from which, comes chocolate. When raw, cocoa powder tastes bitter. It looks dark and intense. However, when you add cocoa powder in cakes, biscuits and desserts, it adds a distinct and good chocolaty flavor to the dishes. An ounce of unsweetened chocolate block is equivalent to 3 tbsp of cocoa powder. To melt the cocoa powder, take a tablespoon of shortening for every 3 tablespoons of the powder and then mix the two ingredients in a saucepan and start heating it on a very low flame. You can add the other ingredients gradually.
