Chefs always recommend that you slice, chop, grate or shred your cheese before melting it, as, it saves time and fuel. While some cheeses can be microwaved to be melted, there are others which are so temperature sensitive, that, the melting them over gas burner is much preferable. Shredded cheese is best added towards the end of the cooking, and is used a topping. A little and brief heat melts shredded cheese like mozzarella and others. For stubborn cheese like cheddar, you can also add melting agents like béchamel sauce.
