Chanterelle mushrooms can be preserved by either freezing or drying. Wash the mushrooms and pat dry them with a paper towel. Freeze them in airtight bags. In order to dry the mushrooms, either cut them into halves or slice them to be dried in a dehydrator or in an oven on very low heat. Place the mushrooms on a cookie sheet in the oven. They can also be stringed and dried. Chanterelle mushrooms and delicious additions to bakes, casseroles, stews, soups, and even soufflés.
