Ripening or curing of raw anchovies is special method to make it more accessible in market, as ripened ones have optimum taste and better flavor. To ripen raw anchovies, a mixture of salt, a carbohydrate source and a starter culture of lactic acid bacteria are all added to anchovies and kept for fermetation or in semipreserved state for few days. The smell and deep color visually shows the sogns of it getting ripened.
