Amberjack is a fish that tastes great when smoked. To smoke, soak the fillets in a brine solution of water, salt, brown sugar, thyme, one bay leaf, and use the smoker according to instructions. Fish will be done in 30 minutes to an hour, depending on the thickness of the fillets. Serve with either Caper Sauce or Peppercorn Sauce.
