The temperature of water is very important to avoid bitterness setting in the tea without losing out on the real essence of the tea. The water temperature varies depending on the type of tea that is used for making iced tea. Green and white teas need lower temperatures (below boiling temperature) and lesser time of steeping the tea, but black teas and oolongs require water that is hotter and a longer steeping time. Bitterness in iced tea can be avoided by taking care of the temperature of water and tea steeping time.
