Curry leaves belong to a sub-tropical tree called curry tree, which belong to India. They are also known as sweet neem leaves. They are used for seasoning in several south Indian and Sri Lankan recipes. However, unlike coriander leaves, they are not used at the end of the cooking but fried with chopped onion and mustard seeds at the beginning. They must be used immediately after taken from plant since they have a small shelf life. Dried leaves are also available but they are not as aromatic as fresh ones.
