Nesselrode or Nestlerode refers to a person, otherwise known as Count Nesselrode who was a Russian diplomat during the mid 1800s. There are a number of dishes named in his honour and the most popular of them is the Chestnut pudding. The pudding is prepared by mixing sweet custard which has added whipped cream or beaten eggs, mixed with chestnut puree. This mixture is poured into a mould and decorated with fruits or fruit syrup.
