Carnitas refers to pork which has been braised or roasted(which is simmered first) in Mexican cuisine. Pork carnitas is a traditional dish made with highly marbled, rich boston butt or picnic ham cuts of pork. The braising temperature is in the range of 160 to 180 °F for 8 to 12 hours. Roasting may be done at high 375 to 425 °F for a few minutes.
