Levain is a bread starter, or a leavening agent which is also known as chef. It is commonly used as a replacement for yeast to raise the dough while baking. It has been in use since 1600’s and may be called wild yeast, or sourdough. Starters take much longer than yeast to raise dough, but some bakers prefer it over yeast as Levain is a naturally occurring product.
