Madrilène is a kind of consommé which is made using tomatoes as the main ingredient. It may be served cold in the summers as a summer soup and may be garnished with lemon wedges or it may be served hot. It is particularly found at many French restaurants and can be prepared at home as well. The word Madrilène in French means “soup in the style of Madrid” and is in the form of rich broth which is cooked over a slow flame with an assortment of ingredients.
