Mirepoix is a blended vegetable base that is used in many dishes that are stewed, sautéed, stir fried and even soups. Usually onion, celery and carrots are either diced or minced to form the mirepoix. This mix of diced vegetables, also known as the "holy trinity" in the French cuisine, is slightly fried in butter and herbs (if desired) and then added to the dish that is being prepared. Some people even add small cubes of fatty meat that are crisped in the pan along with mirepoix. All these ingredients add a lot of flavor to the dish to which they are added.
