Tagiatelle is a flat wide noodle counted as one of the traditional pastas. It is supposed to be prepared fresh and used in recipes but these days it is commonly sold in its dried packaged form. Two varities of Tagiatelle are usually seen: the plain white one and the green one which is colored and flavored with Spinach puree. The dried tagiatelle needs to be boiled and tossed with sauces to prepare a pasta dish. Due to its absorbent nature Tagiatelle is better paired with thicker sauces than the thin ones. Sauce Bolognese is one of the traditional sauces paired with this pasta since it has its origins in the city of Bologna, Italy.
