The pure oil that is collected after cold pressing the olives is called virgin olive oil. It is also unrefined oil. The extra virgin olive oil is the best quality of olive oil as it has a superior taste and has less than a percent of frioliac acid. The regular Olive oil on the other hand is blended with other ingredients and further processed and refined. Light olive oil is the olive oil which has undergone a lot of refining.

There are three types of grades in olive oils. The extra virgin which is the highest grade, it is untreated and easily digested, virgin oil is the second highest grade, it is also untreated but the acidity level is between 1-2 %, plain olive oil it is the next stage after virgin oil.
