In the Indian food restaurants, fennel and licorice are mixed and served as digestive and freshener after meals. Sometime, the fennel leaves are cooked with the meals. In Indian restaurants, the mix is called “moti saunf”. In many cases, it is only the fennel that is served with a chemical called “anethole” which has exactly the same flavor as licorice. They are also often used in “Benaras Paan” as a sweetener and mouth freshener and served after meals.
